Creamy Onion Soup

An always favorite! Light, creamy and gluten free!
Ingredients
  • 2 1/2 lbs white onions
  • 4 cups chicken stock (home made or high quality)
  • 1/2 cup coconut cream (or heavy cream if you eat dairy)
  • 4 oz fat (coconut oil or butter)
  • 1 tbsp garlic powder
  • 1 1/2 tsp sea salt
  • 1 tsp smoked paprika
  • 3/4 tsp cumin
  • 1/2 tsp black pepper
Instructions
  1. Heat butter or coconut oil over med low heat.
  2. Thinly slice onions and add to pan with seasonings (garlic powder, paprika, cumin, salt and pepper), covering and cooking on low heat for 30 minutes until soft and tender.
  3. Add stock and mix well.
  4. Bring soup to a boil, then reduce heat to medium and simmer for 5 minutes.
  5. Let soup cool (or don’t, but remove from heat and be careful!) before blending with an immersion blender until smooth.
  6. Stir in coconut or heavy cream, gently heating but do not boil. Adjust seasonings to taste!

This is one of my favorite easy lunches- light enough for the summer but satisfying enough for the winter. Being super easy and made of ingredients that I always have in my house? PERFECT!
