Creamy Onion Soup

An always favorite! Light, creamy and gluten free!
Ingredients
- 2 1/2 lbs white onions
- 4 cups chicken stock (home made or high quality)
- 1/2 cup coconut cream (or heavy cream if you eat dairy)
- 4 oz fat (coconut oil or butter)
- 1 tbsp garlic powder
- 1 1/2 tsp sea salt
- 1 tsp smoked paprika
- 3/4 tsp cumin
- 1/2 tsp black pepper
Instructions
- Heat butter or coconut oil over med low heat.
- Thinly slice onions and add to pan with seasonings (garlic powder, paprika, cumin, salt and pepper), covering and cooking on low heat for 30 minutes until soft and tender.
- Add stock and mix well.
- Bring soup to a boil, then reduce heat to medium and simmer for 5 minutes.
- Let soup cool (or don’t, but remove from heat and be careful!) before blending with an immersion blender until smooth.
- Stir in coconut or heavy cream, gently heating but do not boil. Adjust seasonings to taste!
This is one of my favorite easy lunches- light enough for the summer but satisfying enough for the winter. Being super easy and made of ingredients that I always have in my house? PERFECT!
