Creamy Corn Soup
Hot summer days with a very active kiddo running around mean that when it comes to dinner time I’m looking for easy. This simple and delicious soup is the perfect answer.
I saw a similar recipe to this one when I was flipping through a cookbook at Barnes and Noble a while back and thought it was a genius idea! Here in Texas, summer time means fresh corn is available very cheaply both at the grocery store and farmers markets. At 5 or 6 ears of corn for a dollar and rounded out by pantry staples, this soup is a sensible addition to our menu. It also happens to be just the right balance of creamy and light to be filling without heavy. I pair it with a grilled cheese on Hawaiian Sweet Bread for my son and husband and a large green salad for me.
Ingredients
- 1 white onion, chopped
- 6 ears fresh corn, kernels cut off cob
- 2 sweet potatoes, diced
- 3 cups vegetable broth
- 3 cloves garlic
- 1 TBSP cumin
- 1 TSP ground mustard
- 1 TBSP cayenne pepper/chili powder
- salt and pepper, to taste
- 1 TBSP olive oil
- optional toppings: cherry tomato, shredded cheese, plain yogurt, green onion
Method
- Heat oil in soup pot on medium heat and saute onion until soft. Add garlic and cook until garlic starts to brown
- Add diced potato and vegetable stock, bring to a boil and simmer until potatoes are fork tender.
- Add corn, stirring well and cook for 5 minutes.
- Add seasonings, adjusting to taste.
- Simmer soup for 10 minutes on medium low (or just high enough to maintain the simmer). Using an immersion blender, blend until a smooth puree. If soup is more sauce than soup like in texture, add vegetable broth a 1/2 cup at a time until desired consistency is reached.
Serves 4-6.
