Meal Planning For More Time At The Table

This week is a bit of an anomaly for our family – it’s actually a quiet one. While I have a lot of work to do, I’ll be around the house. I decided to take advantage of our more relaxed schedule to cook some dinners  that our busy schedule hasn’t allowed for a while. We’ll spend a little more time at the dinner table and enjoy the end of summer!

Sundays are the corner stone of my busy week – the prep I normally do on Sunday allows me to bring my family to the dinner table with a delicious, nourishing meal despite our very busy lives. The wonderful ladies over at In-Dependent.org are celebrating Family Meal Month in August. It reminded me that, when I am able to take the time, it’s nice to get back to enjoying being in the kitchen. Good food is love on a plate and this week I have the breathing room to take a little time on it.

This week we are “in between” – my son is on a break from swim team, school starts in 3 weeks, I’m prepping for a horse show in 3 weeks. Like the calm before the storm, I can see the chaos coming. And that’s ok. But I’m going to take the opportunity to sit back and connect with my family.

Breakfast

poached eggs with sauteed kale

greek yogurt, mixed berries + walnuts

Lunches

for my husband – salad in a jar, turkey or ham sandwich, yogurt, pretzels + raw veggie bag

Salad In A Jar + spicy chicken

leftovers

Dinners

Sunday Pot Roast

Earl Gray Chicken With Sticky Rice and roasted dijon bok choy (keep an eye out for this special Chopped-style recipe!)

Roasted Pork Tenderloin, roasted broccoli and oven roasted potatoes

Penne Caprese

BLTA Salad with Heirloom Tomato Dressing

Leftover Stirfry

Weekends are generally more relaxed. We usually eat out at least one day for lunch and finish up leftovers or random ingredients for dinner.

Sunday Meal Prep

I gave myself a week off from Sunday meal prep today. Instead, I spent the evening rehabbing my rather battered dining room table and chairs. Check back later this week to see how it turns out!
