Meal Planning For Simple Dinners
With less than 30 days left until we move to Kentucky, my weekly meal planning focuses on using the ingredients in my pantry. This week I need simple and sustaining!

I’m no stranger to moving – we’ve done 7 moves in the 10 years my husband and I have been married. Despite being a complete surprise, this move has gone smoothly so far. That experience means that I had a process in place. Quickly, the ball was rolling for a new home in KY and leaving our home here in Texas. The dogs have their own checklist – vaccinations, vet records and a new prescription for my senior girl. Moving my horse is a whole new checklist. There are school decisions to make and arrange for. It easily, and quickly, overwhelms.
There are so many decisions to make. It becomes exhausting. As much as I enjoy food and cooking, I’m ready for simple answers after a day of juggling move to dos, work and my normal routine. This week’s menu does exactly that. Straightforward dishes that are simple to put together and make plenty of leftover protein for my lunches.
