Weekly Meal Planning 12/52
Meal planning this week was a quick thing- I’m mostly using up the food we didn’t eat last week with my husband not being around as much. Focused on convenience and meals I can prep ahead, I’m hoping to minimize time in the kitchen for the next few days.
We’re starting week 2 of Field Exercise that has my husband working from 5 am to 10 pm- with five days left of those crazy hours. The munchkin is headed back to school, which I’m both celebrating and dreading. It’s time to get organized for a bit more running around.

breakfasts
banana pancakes leftoverslunches
hard boiled egg and avocado salad creamy onion soupdinners
baked mustard lime chicken, roasted butternut squash with green salad Mongolian beef with rice chicken wraps with creamy onion soup (lettuce wraps for me, tortillas for the fam) Mexican breakfast casserole fried cauliflower, herbed rice and green beans left overs**I’m planning on one night out after the field exercise since my husband hasn’t eaten a fresh dinner in days**
My Sunday Food Prep:
- portion salad for my husband and I for the next two days
- portion berries and veggies for lunches and snacks
- dice leftover lime mustard chicken and freeze to use in chicken wraps
- hard boil eggs
- make soup from leftover roasted butternut squash and freeze to use for lunches later.
- prep my son’s lunches- veggie and fruit portions (carrots, peppers, cucumbers, grape tomatoes, berries, grapes) + avocado crema for dip
- Prep Mongolian beef in a freezer bag with ingredients for a quick, on the run meal
What’s on your menu this week?

The lime chicken sounds great. Definitely looking that one up! We are headed for St. Patty’s day fare today, with a corned beef in the crock pot. But instead of the traditional cabbage we are having a cabbage/kale salad to go with it. I might even add mandarin oranges … your picture looked so good! Tuesday is a barn day so straight up leftovers are in order.
the chicken was really delicious- that was a new twist for me! and the leftovers are super versatile. You can’t beat a crockpot meal on Mondays!
