Weekly Meal Planning
This is one of those weeks where the goal is mainly to get through. Its Spring Break here in CenTex and it just happened to coincide with my husband’s Field Exercise- which means that for all intents and purposes I’ll hard a bored four year old + work + no husband all week. So this week’s menu is heavy on meals that are quick to prepare can be prepped or made ahead in quiet moments and are easy. I’m trying to stick to the 21 Day Sugar Detox as much as possible (I cut out my morning hot tea and it’s killing me!) but I’m also not going to drive myself crazy making it happen. 🙂
breakfasts
scrambled eggs egg and kale casserole lunches salad with avocado crema and hard boiled egg butternut squash soup creamy onion soup dinners slow cooker chili (from Against All Grain) sweet potato noodles with braised chicken in artichoke sause ( chicken adapted from Against All Grain) slow cooker sesame orange chicken with coconut cauli-rice and roasted broccolini mexican chicken chowder (Against All Grain) garlicky shrimp over carrot noodles pork tenderloin roast with sweet potato mash and green salad You’ll notice a lot of recipes from Against All Grain- I decided to simplify this week as much as possible and use either recipes I know or from one cookbook. I just leave it on the counter and when I grab a moment to cook- it’s right there. I wasn’t joking about the goal being survival 😉
