I’m simplifying my week with meal planning and slow cooking meals.

I’m still tired. I don’t know if its the weather, work picking up, or if I’m just not sleeping enough but I’ve been wrestling with some serious brain fog for the last couple of weeks. I know that one of the most effective ways of lightening my load is to make and stick to  a meal plan. But that just isn’t always the easiest thing to do.

This week, I had to scrape a bit to come up with recipes. I just couldn’t up with anything I wanted to make. These will probably be the simplest version of each dish that I can come up with. All are recipes that I know off the top of my head. It’s a little heavier on comfort food that I’ve been going with lately.

I’ll be focusing this week on things I can prep ahead of time- it’ll be the vast majority of my Sunday afternoon!
